    Brasserie Molitor reopens its doors and celebrates traditional French cuisine revisited by its new executive chef, Gregory Gbiorczyk.

    Brasserie Molitor is delighted to announce that it has reopened under the leadership of its new Executive Chef, Gregory Gbiorczyk, and his team of chefs. Brasserie Molitor invites guests to rediscover the quintessence of traditional French cuisine, revisited with a contemporary and creative touch.
    Brasserie Molitor is renowned for its ability to combine tradition and innovation. Chef Grégory Gbiorczyk, with his wealth of culinary experience and passion for French gastronomy, is committed to reviving French classics while adding a new dimension. 
    On the menu, you'll be able to sample our revisited iconic dishes: Perle Blanche oysters, our beef au poivre, pâté en croûte with foie gras, vol au vent with Signature mushrooms, our tartare au couteau, our fish of the day coco lime...
    On the sweet side, our Paris Molitor, our Paris Brest revisited, a poire pochée and a superb vanilla caramel mille-feuille will delight your taste buds.
    Season after season, the choice of short, French and organic circuits gives its menu and its products exceptional quality.

    Rendez-vous of the week :
    The Brasserie Molitor is innovating with a unique experience: the "rendez-vous of the week". Each day of the week will be devoted to a traditional French dish in addition to the à la carte menu, allowing diners to enjoy their favourite dish at any time. Mondays will be reserved for beef tartare au couteau, Tuesdays for beef confit lasagne, Wednesdays for Burger Molitor and so on. A great opportunity to explore the diversity of French cuisine, every day.

    Practical information:
    BREAKFAST: Monday to Friday 6.30am to 10am / Weekends and public holidays 7am to 10.30am
    LUNCH: Monday to Friday from 12:00 to 14:30 (closed on Saturday lunchtime)
    DINNER : Tuesday to Saturday from 7.00 pm to 10.30 pm (Closed on sunday and monday nights)


    About Brasserie Molitor
    Since its revival in 2020, Brasserie Molitor has been the setting for memorable encounters, offering a first-class dining experience while preserving the cultural heritage of Paris. Chef Grégory Gbiorczyk has created a revisited traditional French menu. Nestling in the 16th arrondissement of Paris, it boasts a friendly atmosphere and an uninterrupted view of the outdoor pool.

    About Chef Grégory Gbiorczyk: 
    Chef Grégory Gbiorczyk has worked in a number of prestigious establishments, including the Château de la Messardière in Saint-Tropez and the Kilimandjaro in Courchevel. He joined Lucas Carton's brigade and soon afterwards the George V in Paris, where he gained experience in haute gastronomy and luxury cuisine. Then, at the Bristol, his hard work helped him obtain the 114 restaurant's first star alongside Eric Frechon.
    In 2016, Grégory became Executive Chef of the Union du Cercle Interallié, where he stayed for three wonderful years, each one richer than the last. Finally, he decided to set off on a new adventure, but things didn't go according to plan. But Grégory is a man who knows how to bounce back, and very quickly he joined new establishments that gave him the chance to see another side of his job.
    And finally Molitor, which he will join in 2023. "Why Molitor? There's something sparkling and glittering about this unique establishment! What a dream! "
    As Executive Chef, Grégory Gbiorczyk manages the Molitor Brasserie, banqueting, rooftop and room service.
